How does a photographer protect the rights to their photograph? Do they copyright it or is there a process to proving rights?
When selling rights how to photographers do it? Do they charge just for one use, for ownership of the pics, for rights to use but they don’t own the pic, how does it work?

all your answers are there.
If you are a serious photographer you might consider registering your photos in case anyone sells and makes money off of your work.
There is also a "Trade mark" that is done when you reproduce or make copies of your original photo its a water mark that says your name so that no one can claim it as theirs.
If you want to register the photo: Search for "copyright form" on any search engine. Fill the form and send it to the US copyright office its about sixty dollars.
